How is Mexican bean pasta made?

This dish is nutritious, full of flavor, and easy to make.

Ingredients (serves 4)

  • 400 g green beans
  • 50 g of pritaminkocka
  • 300 g corn
  • 1 can of red beans (400 g)
  • 50 g flour
  • 3 tablespoons of oil
  • 1 teaspoon red pepper
  • 1 tablespoon of salt (to taste)
  • 1 pinch of ground pepper
  • 1 g hing (optional)
  • 200 ml sour cream
  • 400 g fusilli pasta
  • 2 ml of smoke flavoring (optional)

Step-by-Step Instructions

1. Preparing and Cooking Vegetables

  • Pour about 2 liters of water into a pot, then add the pencil erasers, Pritaminkocka, and corn.
  • Season with salt and cook over medium heat until the vegetables are tender.
  • If you're using canned corn, add it at the very end of cooking, along with the canned beans.

2. Preparing the batter

  • In a skillet Heat the oil, add the flour, and sauté until light brown.
  • Remove from the heat, then stir in the red bell pepper, and dilute it with cold water until there are no lumps.

3. Assembly and Seasoning

  • Pour the roux over the cooked vegetables.
  • Add the canned beans, sour cream, salt, and smoked flavoring.
  • Mix everything well and continue cooking over low heat.

4. Adding the pasta and final seasoning

  • Pour in the fusilli pasta, and cook until tender.
  • If necessary, adjust the consistency of the dish with hot water.
  • Finally with salt and pepper Season to taste, then let it rest for a few minutes before serving.
